Galette des rois 9-inch:  almond filling in a flaky puff pastry case, complete with feve and gold paper crown.  $22, available through Fat Tuesday, February 21st.

Think Valentine’s Day! My 5-inch tart is perfect for two, and the profiteroles can be shared by any number of dessert lovers. Available until the end of February.

• Chocolate caramel pistachio tart:  cocoa shortbread crust, caramel pistachio layer, topped with a layer of dark chocolate ganache.  $11
• Petite passion cream profiteroles:  choux puffs filled with light passion fruit cream and garnished with raspberry ganache and chocolate crunchies:  $12 per dozen
